Cannoli are one of the most well-known specialties of Sicilian pastry making. They were originally prepared for Carnival; they have become very popular throughout the country, quickly becoming a renowned example of Italian pastry art in the world. The origin of the cannoli is certainly distant in time. In 70 BC, Cicero, during his stay in Sicily as quaestor, spoke of a dessert similar to today's cannoli: "Tubus farinarius, dulcissimo, edulio ex lacte factus", (a floury tube filled with milk for a very sweet food). In reality, the reference to the name is linked to the river reeds in which the wafer was rolled up until a few decades ago during its preparation.
