The Sicilian amphora par excellence. Tradition has it that the real bummulu is obtained from a mixture of terracotta and salt, the latter for its hygroscopic characteristics, guaranteed a porosity such as to allow transpiration. This maintained a humid external film that exuded stabilized the cool temperature of the water or wine for many hours. But our beloved amphora, ancient companion of carters and wayfarers, is still counted among the most characteristic instruments, because empty, blowing inside its cavity, it emits a low hiss, which is unique in its sonority.
